Fresh Truffles

Bianchetto truffles (Tuber borchii) are an Italian white truffle grown beneath our own trees in Wanganui, New Zealand and hand-harvested in season. Bianchetto has a bold aroma. It is earthy and garlicky, and a little goes a long way.

Available fresh through the winter season. We supply home cooks, chefs and restaurants while the season lasts.

Fresh Truffles

Brush clean gently just before use. Shave thin over warm dishes right at the end: pasta, risotto, eggs, roast potatoes. Let the heat of the plate release the aroma rather than cooking the truffle itself. Store wrapped in paper towel in a sealed jar in the fridge and enjoy within the week.

Truffle Salt

Use it as a finishing salt rather than in the pot. A small pinch over eggs, hot chips, pasta, popcorn or roast vegetables just before serving is all it needs. Keep the jar tightly sealed, away from heat and light.

White Truffle Oil

A finishing oil, not a cooking oil. Drizzle a few drops over pasta, pizza, mashed potato, soup or scrambled eggs after plating, since heat dulls the aroma. Store in a cool, dark place and use within a few months of opening for the best flavour.
